Instructions
- Sauté aromatics
In a large pot, heat olive oil. Add onion and garlic, sauté until soft. - Add the veggies
Stir in carrots and celery. Cook for 3–4 minutes. - Simmer the stew
Add lentils, herbs, tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 30–35 minutes, until lentils are tender. - Finish and serve
Stir in greens (if using), season with salt, pepper, and a squeeze of lemon. Serve hot, with crusty bread if desired.
