Ingredients (Serves 4)

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup dry green or brown lentils (rinsed)
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or oregano
  • 1 bay leaf (optional)
  • 1 can (400g) chopped tomatoes
  • 4 cups vegetable broth (or water + bouillon)
  • Salt & pepper to taste

Optional: a handful of spinach or kale, lemon juice for brightness

Instructions

  1. Sauté aromatics
    In a large pot, heat olive oil. Add onion and garlic, sauté until soft.
  2. Add the veggies
    Stir in carrots and celery. Cook for 3–4 minutes.
  3. Simmer the stew
    Add lentils, herbs, tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 30–35 minutes, until lentils are tender.
  4. Finish and serve
    Stir in greens (if using), season with salt, pepper, and a squeeze of lemon. Serve hot, with crusty bread if desired.
